Vada's Melt-In-Your-Mouth Pie Crust |
| 2 Cups flour 3/4 Cup Crisco 3/4 tsp. salt Glass of Ice Water Cut shortening, flour and salt together until crumbly (about the size of peas). Add Ice Water (a small amount at a time) until dough just barely holds together. Keep your warm, little hands out of the dough until you make it into a ball. (A ball about just big enough to fit 9 inch pie pan when you have it rolled out thin.) Use floured board and rolling pin. Makes enough for a 2 crust pie. Bake at approximate 400 degree for about 8-10 minutes or until crust is light brown. ---- Vada E. Paris McGill |

| MWag's Old Fashioned Pie Crust... "Okay.
Here is the status of the home made crust. I don't have a food processor
nor microwave because of the lack of counter top space and how much
I hate cleaning extra appliances. Funny thing. While making this crust,
I remembered making my first pecan pie with Grandma at back in the
mid 80's. I also found that my experience cutting butter in to graham
cracker crumbs for my semi-famous 'Sex-in-a-Pan'
help me create this without a food processor. This must be the way
that they made it back when some chefs were young (just kidding)." Combine (with fork or food processor) and cut together until you
get pea size clumps: Slowly combine (with fork or food processor): 1/4 cup iced water (no ice cubes). Roll in a ball and flatten. Wrap in plastic and refrigerate for 1 hour. Let Dough soften to room temperature. Roll on floured surface into a 13-inch round. Carefully place in 9-inch pie pan. Trim and shape dough around the edge. Wrap crust in foil to prevent burning. Freeze for 10 minutes. |
Vada's Pecan Pie |
| 2 eggs, well beaten 1 cup sugar 1 cup white syrup 1 cup pecan meats + 2 handfuls. 2 Tbsp. flour 3 Tbsp. milk 2 tsp. vinegar lump of butter 1 tsp. vanilla 2 dashes salt Vada and/or Gene added the Old Weller Whiskey to the recipe. I'm Not sure exactly just when. It is an optional ingredient and you don't need to add it to yours. [Vada also added 2 tsp. vinegar, 2 Tbsp. flour, and 2 handfuls of pecans to the original recipe.] mix all but pecans together. Put them on top. Bake in uncooked pie shell at 450 degrees for 10 minutes then turn down to 350 degrees and bake until set. Vada told me at one time that if you place the pecans in the pie shell and pour the mixture over the top that the pecans will rise to the top while they are cooking. | 3/4 cup sugar 2 Tbsp. flour 1 tsp. salt 1 cup dark corn syrup 2 eggs 1/2 cup evaporated Milk 1 cup pecans 2 tsp. butter, melted Mix sugar, flour & salt. Stir in corn syrup & melted butter. Beat in eggs, one at a time. Mix in milk, pecans & vanilla. Pour into 9 inch pie crust. Bake 50 minutes at 375 degrees. Dixie Howerton, Houston, TX |

| 3 Whole eggs, well beaten 1/2 to 1 cup sugar 1 cup white syrup 3 Tbsp. butter 1 tsp. vanilla 1 cup pecans Bring to a boil - sugar & syrup. Add remaining mixture together. Pour in unbaked pie shell. Bake 45 minutes at 375 degrees or 400. ----- Minerva Simmons, deceased |

| 3 eggs, well beaten 1/2 cup sugar 1/2 cup light corn syrup 1/4 tsp. salt 1 tsp. vanilla 1 cup pecans 1/4 cup melted butter or oleo Combine eggs, sugar, and corn syrups. Mix well. Geneva's Apple Pie Filling |
| Here is a Fruit Filling from my mother's younger sister
(Geneva PARIS-SMITH), Chester, OK
Geneva tries to find either Winesap or Jonathan apples (sliced thin and stacked into the crust.) What Grandma Paris did for a 10 inch pie . . . She used about a Cup and 1/4 sugar, about a heaping Tbsp. of flour and maybe a tsp. cinnamon. Mixing together in a separate Cup. Add about 1/2 of sugar mixture to bottom of crust. Add thinly slices of fresh apples, and dot with about 3 pats of margarine. Add the rest of sugar mixture. Put on top of crust." Geneva likes to roll the crust as thin as she can handle it without poking holes in it. Sprinkle sugar on top. Bake 350 degrees. |

INGREDIENTS:
**Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies. ;) Author Unknown ;) |
